Roasted cauliflower and red pepper soup

My old roommate make fun of me because every time he came home from work,  I was always doing something with cauliflower.   He shouldn’t knock it til he tries it….but he moved out before he tried it.

More for me!

1 med head cauliflower
3 cloves garlic
1 onion
2 red bell peppers
1 tsp Thyme
4 cups chicken broth
1 tsp chili powder
1 pinch red pepper flakes
Salt and pepper

Chop up cauliflower and halve the peppers (removing seeds) Coat with EVOO and roast in the oven until browning or skin of peppers start to come off.

Sautee the chopped onion in EVOO, about 5 minutes. Add garlic,  thyme,  red pepper flakes and cook until fragrant.   Add the roasted red peppers, cauliflower,  broth,  chili powder and cook for 10 minutes before pureeing with a hand blender.

Season with salt and pepper and pour yourself a piping hot bowlful
