(Still) Alive and Kickin’

Well hello!

Yes I’m still very much alive. VERY much alive.  My little dude wants my undivided attention most of the time and when I’m not with him, I’m at work.  So basically, I’m indisposed 24 hours a day.  So busy that I haven’t even stripped the pee-soaked sheets off the bed yet.  However, I could be changing those sheets rather than blogging….which would you choose? I’ll get to it some time today.


Lately neither one of us has been very impressed with the food around here.  I can’t blame him for not wanting dinner when I don’t want it either.  I admit it, I eat too healthy, don’t salt my dishes enough…..my stuff is just plain boring.  Pinterest came to the rescue!  I needed something fast and delicious and that is what I got.

I followed the recipe close enough. First off, I skipped the rice.  Not to cut calories or anything but quite frankly, I’m not a fan of rice.  I’m only a fan of it when it’s in my sushi.

Since I skipped the rice, I didn’t think I had to follow the weight of the chicken and cooking time so closely….and for once I was correct!  Given my track record with straying from a recipe when cooking, I was expecting a disaster.  Never happened.  *happy dance*

No rice, huge 11 oz pieces of chicken, sealed in the packet (with all listed ingredients) and cook for 40 minutes at 400*.

Holy crap this was good.  Why B wasn’t as crazy about it as I was blows me away.  Sometimes I think he doesn’t have taste buds.  Long story short, I ate almost all of it.  In 3 sittings.  *burp*

I MUST add that I was able to fit half a foil pack in my macros for dinner.  SCORE!

I used to have 2 desks in my home office and since becoming a Ma, my office now serves as my office/play room. No room for that 2nd table anymore.  So the hubs sawed the legs off the table to make it short enough to B.  A simple fix makes my man a genius.  I never would have thought to do that.  (Husband needs to be on flea market flip?)

Of course the table is mostly used as a step stool to get up in the bay window.  Not my favorite but I let him every once in awhile when I’m in the room.  Plus, how adorable does he look watching his daddy work on the truck??


My latest hobby is making to-do lists.  I love that satisfied feeling you get when you mark something off your list (and pray it doesn’t make its way back on).  I even enjoy buying the cute paper I write my to-do list on!  There is NO way I can function without it and anyone who says they can is lying.  Or sans kids.

Speaking of which, need to get started on that list.  Just crossed off number 1; “drink coffee”.

A small miracle happened

A small miracle happened yesterday.  While I was out shopping I got a text from my stepdaughter offering to watch B while the hubs and I went to dinner.  Don’t mind if I do!

But it gets better…..

On the way home, B fell asleep in the car however I was able to successfully transition him to bed where he continued him nap.

And yes, it gets better……

For the first time in EVER I took a shower and got ready for our night out while B stayed asleep.  Wha?!  I kept going in there and checking on him because this is just nuts.  When I was done getting ready, I had absolutely no idea what to do with myself.  At this point I’m using to chasing B and keeping him out of the trash can or something.

So I popped open a bottle of Riesling that was literally calling my name.  Literally.


So there I sat in front of the fire, watching “Miami Ink” and drinking my delicious wine.  The stars had aligned the evening of February 13, 2016.

At dinner, I was reaching for some chapstick in my purse when I started to laugh.  I was so excited about going out that I forgot to clean out (or change) my purse.  I’m sure other mammas have this problem.  My date night purse consisted of my regular stuff….plus diapers, wipes and desitin.


Speaking of chapstick, of all things, I didn’t have any in my purse.  Did you know that butter makes a good alternative?

So I had a “food find” this week. Normally I don’t go running to the store for something I saw on a commercial but a) it looked good b) I also saw it on my iBotta app and c) I am not at all inspired to cook lately.

I had made buffalo cauliflower before and it was a bit of work.  I’m plumb tuckered out and don’t feel like cooking much lately so this looked absolutely fantastic.  Tastes great although B didn’t think so.  He was too busy working on the rotisserie chicken I bought.

Bottom line, I’ll buy it again.


Another week at the gym.  Managed 5 times which is better than when I was going to CrossFit.  Getting a little bit stronger every time!  5# doesn’t seem like much but it’s an accomplishment.

I’m sure you notice there is a ton of redundancy in Outlaws programming.  But you know what? The sh*t works.  When I want to switch it up, that’s what the WODs are for.


Below was absolutely positively terrible.  Why?  Because I was bored out of my ever living mind!  I am been wanting to run lately but it’s just too damn cold out there!  So one day I didn’t feel like lifting.  Instead I opted for CrossFit Endurance long intervals. If I was outside, this would not have been a problem but I didn’t have that choice.  I was on a treadmill and it was a nightmare.  Can you tell by my writing??

This is what it says,
7 minutes on, 7 minutes off
Incline of 2%
Range 2-5 rounds
Walked 3 minutes then began the intervals.  Running at 6.0 and walking at 3.0.  By the 3rd round, I wanted to scream.  So I left.

The deets on roasted beets

Every so often I will buy something out of the ordinary in the produce section.  It’s not always delicious but it keeps things fun in the kitchen.  So when I saw these beautiful beets at the grocery store I jumped at it.  This past summer I was eating them fresh from my father’s garden and man were they good!  Growing up, the only way I would eat them was pickled.  I guess I had to wait quarter of a century for my tastes to mature because now I’m obsessed with them roasted.

The beauty of it is that it’s so simple.  Wash off the beet, wrap in foil and put in a 400* oven for 100 minutes.

Now before you roll your eyes, I realize that 100 minutes is too long but that’s what it took before I could easily insert a knife.  I was told that I could cut them in half and they would be done in 15 minutes but I’ll try that next time.  In case you haven’t figured it out yet, these were large beets.

Once they are done, peel the skin off and cut them however big (or small) you want.  Toss them on a salad. Eat them plain.  Eat them with butter and salt. I don’t care how you eat then, just eat them.  And yes your poop will look like blood.

Setting a Standard?

This is absolutely my favorite time of year to run.  The crisp fall air, the smell of leaves and the bright colors…..what’s not to like?


The smell of leaves is up there with a spring rain and wood burning in a firepit.  If it was a perfume, I’d wear it.

So as I was running it occurred to me that I am better shape now than before I had B.  (Although I don’t look it).  I’ve done 2 half marathons,  which I would have gotten no where close to doing before and I have 2 more endurance races being ironed out.

I figured out why. I was over training and under eating.

I thought I was doing everything right, but doesn’t everyone?  I thought I was doing myself good by working out 7 days a week and eating insane healthy.  Or what I thought was healthy.  Since having B, I have slacked off a little bit….I work out 4 days a week on average. I will admit, I wish all my rest days were active rest days, but they are not.  Not to say that I’m sitting on my behind all day when I don’t workout; that’s not the case.  If only housework, running errands and all the things that Mamma’s have to do was considered “active” rest.

I have also eased up on my food.  Not many actually enjoy snacking on raw pepper strips but to my surprise B does!  Younger me would make baked chicken with avocado and roasted brussels spouts but why would I want to torture my son like that.  I want B to enjoy food, as all kids should.  Heck, as EVERYONE should!

So the next time I start getting down on myself or start giving myself a hard time about the extra 5#, I’m going to look back on this and remember what it is I have accomplished in such a short amount of time.

Soups On!!

It’s that time of year again!  Got my sweatshirts out and pinteresting a ton of soup recipes that I want to try out.  But first, caldo verde.

I’ve had my eye on the chorizo for a better part of the end of summer.  Finally when I first saw my breath in the morning a week ago, I knew it was time.

My brother in law is Portuguese and his mother introduced us to this soup.  It is probably one of my most requested soups….other than my mom’s roasted eggplant soup, my brothers posole and a decent green chile.

My black bean soup is out of this world too.

Back to caldo verde.  It’s a very healthy broth based soup made with kale and chorizo and can easily be substituted with collard greens and any spicy sausage that you can find.  Honestly, if I cannot find chorizo, I don’t make this…..so I cannot vouch for any substitutions.

There is a nice simple recipe…but I added garlic and chili flakes when I sautéed the onion.

My $7.99 breakthrough

I think I have FINALLY made a breakthrough.  Holy crap!

If you read my blog from the beginning, I admitted that I had a eating disorder when I was younger that I never think I will truly recover from.  My ma always tells me that I’m scared of food.  Yes and no.  I love food which is why I don’t buy certain things. If I buy those “certain” things, they are gone in one sitting.

I’m not even joking.

A chocolate bar won’t last more than 1 sitting in my house.  Check my freezer.  There is nothing in there.

So back to my breakthrough.  The other day I was feeling like crap. I mean cranky, bloated, yucky crap.  I found myself in Marshalls with B getting coffee and dog treats when I saw a 2-day Cleanse drink.  It was horrible timing because I bought it.  SMH.

Well, it just so happens that the very next day I got my first period since June 17, 2013. That explains why I was feeling “ick” and vulnerable.  Well, today I decided to take a sip of that cleanse.  I mean, what’s the worse that can happen.  Uhh….the first sip and I feel like crap.  Not physically, but mentally…emotionally.  I’m so mad at myself.  Why?!  I don’t need it!  On top of being mad, I’m feeling ashamed.    It’s like I lost myself for a minute.

The younger me who bought into all the hype; the cleanses, diet pills, “being skinny” bullshit had made a brief appearance.  I shut her down fast.  I’m loving the new strong, confident Mamma that I have come to be that doesn’t give a rats ass about thigh gaps and counting calories.  It took me all but 2 seconds to dump everything down the drain.

Best $7.99 I ever wasted.

Yeah, I know, I know.  It’s been ages since I have posted.  So I probably bit off more than I can chew.  Who hasn’t?  I’ve been meaning to post for a few weeks now but by the time I get B to bed at night, I don’t want to get back behind the computer.  I’m behind it ALL DAY!  No sir!  I have been bingeing on “Northmire” on Netflix.

Anyhoo, I had to post some foods finds, two of which I was able to snap a picture of.  The third, I ate too damn fast and threw away the bag.  Had no desire to dig through my trash to get a picture when I know I will be purchasing it again the next time I go to the store.  So #3 will have to wait.  These 2 however…..

I had a hankering for some fish when I was at the store.  I was at the freezer section in the fish department at Stop n Shop; saw some tilapia, flounder, swai, haddock, salmon….wait what?!  Swai?!  I have never heard of swai.  Shit, I don’t even know how to say it!  What’s more?  It was way cheaper than all the other fish.  Threw the bag in my cart.  Holy shit Batman. This. fish. is. good!  All I did was added a little salt and it abso-tootly perfect!  Next step is to learn what herbs go with fish and I’ll play with it.  But knowing that just plain salt works well makes this a very very very low maintenance dinner.


I’m always looking for something new to feed B.  Of course it’s easy to give him yogurt and hot dogs but why would I want to do that?  I want to find something that is healthy that we both enjoy.  I want him to learn to love healthy food just as I do.

And let me take a moment to brag.  Going out to eat with B, he doesn’t like ANYTHING on the kids menu.  Ever notice its fried foods and pasta?  He only wants what Mamma and Daddy eat.  That’s my boy!!

Back to my “food find”.  I came across a coupon for these spinach chicken sausages at BJ’s.  I mean, the name itself looks good!  I like chicken, I like spinach and even if he spits it out, more for me!  Turns out the little dude loves these just as much as I do.  We bought 2 packages on Sunday. Both of which were gone by Friday.


So long story short, both of these get 4 thumbs up.  *sticking both feet in the air*
