(Still) Alive and Kickin’

Well hello!

Yes I’m still very much alive. VERY much alive.  My little dude wants my undivided attention most of the time and when I’m not with him, I’m at work.  So basically, I’m indisposed 24 hours a day.  So busy that I haven’t even stripped the pee-soaked sheets off the bed yet.  However, I could be changing those sheets rather than blogging….which would you choose? I’ll get to it some time today.

(…..8-hours-and-sheets-laundry-dishes-grocery-shopping-and-B-at-the-neighbors-for-a-playdate-later…..)

Lately neither one of us has been very impressed with the food around here.  I can’t blame him for not wanting dinner when I don’t want it either.  I admit it, I eat too healthy, don’t salt my dishes enough…..my stuff is just plain boring.  Pinterest came to the rescue!  I needed something fast and delicious and that is what I got.

Creamy Salsa Verde Chicken foil pack.

I followed the recipe close enough. First off, I skipped the rice.  Not to cut calories or anything but quite frankly, I’m not a fan of rice.  I’m only a fan of it when it’s in my sushi.

Since I skipped the rice, I didn’t think I had to follow the weight of the chicken and cooking time so closely….and for once I was correct!  Given my track record with straying from a recipe when cooking, I was expecting a disaster.  Never happened.  *happy dance*

No rice, huge 11 oz pieces of chicken, sealed in the packet (with all listed ingredients) and cook for 40 minutes at 400*.

Holy crap this was good.  Why B wasn’t as crazy about it as I was blows me away.  Sometimes I think he doesn’t have taste buds.  Long story short, I ate almost all of it.  In 3 sittings.  *burp*

I MUST add that I was able to fit half a foil pack in my macros for dinner.  SCORE!

I used to have 2 desks in my home office and since becoming a Ma, my office now serves as my office/play room. No room for that 2nd table anymore.  So the hubs sawed the legs off the table to make it short enough to B.  A simple fix makes my man a genius.  I never would have thought to do that.  (Husband needs to be on flea market flip?)

Of course the table is mostly used as a step stool to get up in the bay window.  Not my favorite but I let him every once in awhile when I’m in the room.  Plus, how adorable does he look watching his daddy work on the truck??

My latest hobby is making to-do lists.  I love that satisfied feeling you get when you mark something off your list (and pray it doesn’t make its way back on).  I even enjoy buying the cute paper I write my to-do list on!  There is NO way I can function without it and anyone who says they can is lying.  Or sans kids.

Speaking of which, need to get started on that list.  Just crossed off number 1; “drink coffee”.

Bowl lickin’ good

Cake is in the oven, bowl is licked and B is napping.  Mamma got a little time for herself.

So B turns 2 (sobbing) on Monday and we are celebrating tomorrow with the family which explains the cake in the oven.  Growing up, my mom always made our cakes…..and my sister does the same for her kids now.  Some of my best memories are making birthday cakes so wanted to give it a try myself.  Unfortunatly, B is too young to help, and he is taking a nap, so I had to lick the bowl and spoon myself.  I don’t care what kind of “diet” you are on.  You must ALWAYS lick the bowl.

And the spoon.

And the beaters.

That reminds me of my favorite quote; “Good moms lets their kids lick the beaters.  Great moms turn them off first.”

I’ve continued to workout 5-6 days a week and eat a good diet. Diet isn’t good enough because my shoulders/arms are getting too big.  I actually cannot wear any of my shirts right now. It’s kind of a good problem to have.   On the other hand, I might just suck it up for a few more weeks because before long, I wont have to wear sleeves until the fall.

Made a snack recently that hits my sweet tooth and my carb macros; Wasa Crisp Bread (crackers), sunflower seed butter and banana.  If I don’t have enough carbs, I just don’t add the banana and it still does the trick for me.  I can eat this without hating myself…unlike the cake bowl I just licked.

This week was the first week of Spring which means we whipped out the grill and built a fire in the back yard.  Even though we don’t intentionally do it, we almost always grill and have a fire on the first day of Spring.  I actually think it is an unwritten rule that everyone must follow.

Then the next day it snowed.  I didn’t mind that it snowed but it was also a Monday which meant that my Facebook wall was full of people saying:
1) they hate Mondays
2) they hate snow
3) they hate snow on the 2nd day of Spring

So I pretty much logged off all day. I don’t need that kind of negativity.  And neither do you!

Now my house is filling up with the wonderful smell of chocolate cake which means the timer is about to go off.

“Hoppy” Easter everyone!

We don’t have “snow days”…we have “snow weeks”

We have been getting pounded with snow the past week. While everyone is stocking up on bread, here I am in the kitchen making veggie soup. Wouldn’t you rather eat a steaming bowl of this during a blizzard? image

I got this soup recipe off of Pinterest.  Isn’t that where we get everything now?  And a Pintrocity, this was NOT!   My husband is a picky eater and even he loved this.  Not only did I want to make this because it’s so freaking cold outside, I also wanted to make something that B could eat as well.  I don’t want to be that mother that makes one meal for me and an entirely other one for him.  We eat the same foods….together.

  • 2 1/2 Tbsp olive oil
  • 1 1/2 cups chopped yellow onion (1 medium)
  • 2 cups peeled and chopped carrots (about 4)
  • 1 1/4 cups chopped celery (about 3)
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 28 oz of Daddy’s tomatoes (from the farm)
  • 2 medium potatoes diced (left the skin on)
  • 1/3 cup cilantro (because I didn’t have parsley)
  • 2 bay leaves
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper
  • 1 1/2 cups chopped frozen green beans
  • 1 (14.5oz) can of corn
  • 1 cup frozen peas

Your house will smell GREAT but try not to start eating it until the carrots and potatoes are cooked.

And before you ask, “But where is your protein?”. Whenever I make soups, I tend to make my protein separate so I can measure it before I add.  So in this case, I had chicken on the side.

Because of this blizzard, B is home with me…which means I am struggling to get any work done. At home workouts aren’t happening around here and they need to. Living in the northeast, we are snowed in often and I get cabin fever pretty quickly. So in case you were wondering, what AM I doing? Snuggles for time. image And for some reason, It’s taking longer for me to get ready in the morning. I have found myself late getting out the door even though I have close to 3 hours to do so! So I started making refrigerator oats again.

2/3 cups old fashioned oats
2/3 cup coconut milk
1 scoop chocolate nutriwhey
Mix together and place in fridge overnight
12 – 16 almonds (add right before you eat)
This is what I have been eating with my coffee while B gets a YoBaby image Still struggling to find motivation to get to the box. But I’m getting there! Since I am only making it 3x a week, I need to decrease my macros. Im sure once the warmer weather returns, I’ll get to up the macros again. Well, mainly because that’s when I start training for the half marathon.

Pray for me. image

Meal plans and apps

So I’m definitely not blogging as much as I was when I was on maternity leave. If I get one a week, I’m happy. Let’s not forget, this mamma works more than full time, has a baby, 4 dogs and tries to workout 4-5 days a week. My husbands work has him gone about 14 hours a day so there is no “have your husband watch B while you do blah-blah-blah”. My days are slammed.

So this quiet (knock on wood) Sunday afternoon seemed like the perfect time to write.

So I have to say I’m pretty proud of myself. On top of everything, I have managed to take up jogging. On the days that I CrossFit in the morning, those are the days I jog and it works perfectly. After I drop B off at daycare at 8am there is no point going home before class at 9am so I head to the box early and run before class starts. Or if it’s raining too hard I’ll row. Quite honestly, it’s kicking my ass but man I feel good later! And incredibly hungry!

So hungry that THIS happens….

image

……4 block post running/WOD meal. A pile of sauteed green beans with red pepper flakes topped with over easy eggs and a piece of bread. The bread was a requirement to sop up all that yolk.

Since I have taken up running, I want to be able to take B with me so I am in the market for a Bob jogging stroller. Been looking on Craigslist because I have been told but several people that a Bob on Craigslist is better than buying a cheap one new. Sold. Found a few and just waiting for a response. Hopefully this time next week I’ll be jogging with B!

In the past few weeks I have started using the My Fitness Pal (MFP) more because I found out that you can change your macros to fit your diet. Before it was telling me to eat a ridiculously low amount of food a day. Just reading that number made me hungry! So I calculated my “estimated daily energy expenditure” on Eat To Perform (www.eattoperform.com) and then plugged those numbers into MFP. I’m at around 2600 a day. (Take THAT Weight Watchers!!).

I am still learning how to use it so I can’t provide much guidance at the moment. Zone and ETP have me eating different amounts of food at different percentages. Zone is 40/30/30 while EPT has me at 40/34/26. Basically this means 40% of my calories comes from carbs, 30% from fat and 30% from protein. Or in the case of ETP 40% from carbs, 34% from fat and 26% from protein. I’ll be meeting with my box’s nutritionist soon to discuss. I’ll admit it, I don’t have the answer for everything!

I am pretty much maintaining right now as far as weight goes but I’m getting stronger and all this running is making me a little faster. I can’t tell too much of a difference in my clothes….but I haven’t exactly gone through my closet yet. Again, breastfeeding lady here so I can’t wear much of anything right now.

So while I might not have the abs I had before, I still must say I’m making good progress. Getting back into my “skinny” jeans this fall isn’t really on the top of my list right now.

Until next time!
